TRUST Ancient Grains is the creation of a new and unique blend of Spelt, Emmer, Khorasan, with a small addition of Barley grown in Armstrong, British Columbia.  Bottled at 44% alc./vol. it displays a medium mahogany colour.

For (3) plus years it has aged in 200-litre once used Bourbon barrels to gain character, complexity and colour. Hints of vanilla and toast are captured from its brief stay in new American Oak barrels.

On the nose, TRUST Ancient Grains has captured intriguing and complex floral notes offered by Khorsan and Spelt ancient grains, but not weight. Emmer is the backbone with lots of rich concentration brimming with spice, honey, baked apple, molasses and caramel. The touch of Barley adds a nice pop of graham cracker elements and length to the finish. The result is something that is more than the sum of its parts. At 44% alc./vol., this light mahogany whiskey presents remarkable depth with long-lasting spice tones and a satisfying smooth finish.

The Liberty Distillery Trust Whiskey Ancient Grains nbc db (94.5) n23.5 the latest batch of this has taken the nose on to a more honey-rich territory though the wonderfully pernickety grain and tannin interplay is still there to tantalise; t24 lovely mouth feel: clean, precise vanillas wrapped in a soft oil with a light mocha and spice development. Always busy, always working...; f23 lots of cocoa at play here – indeed not unlike a chocolate and vanilla ice cream in flavour; b24 really adore this style of whisky. This is grainy and bitty, the flavours just never standing still, and the variance of cocoa themes is quite amazing. Liberty has stepped up in class and now they have created a whiskey of this complexity which works so well, especially with the sugars being so understated and elegant, I hope they keep it exactly in this style as a core product. Superb. 44%
