Truth Vodka
750mL | 375mL | 50mL
Our hand crafted vodka made from 100% Organic BC-grown wheat, is carefully fermented in stainless steel tanks and then transferred to our copper stills. After a minimum of three distillations to ensure the highest level of purity the spirit is chill filtered with activated charcoal to give a smooth, full mouth rounded character. With the purest BC grain and the cleanest BC coastal mountain water, the finished spirit is supremely smooth, clean and lightly sweet – the perfect base for a classic Martini or a lively cocktail.
Distiller’s Tasting Notes at the still (95% alc./vol.):
The ‘Hearts’ cut begins with a strong wheat character that quickly evolves into delicate notes of vanilla then gradually gains complexity with a clean fresh finish.
In The Bottle (42% alc./vol.):
Brilliantly clear. Delicate aromas of vanilla, nougat and citrus. Silky, dry, medium body with a long lasting creamy and delicate finish. Extremely clear, smooth and long lasting.
Distiller’s Reserve – Truth Oat Vodka
750mL – Limited Release
Inspired by our love for clean, pure spirits and a recipe dating back to 1842, Distiller’s Reserve – TRUTH Vodka is distilled in small batches from 100% Organic BC Oats. Triple-distilled using our copper pot still and 16-plate rectification column, we intentionally use only the heart of the ‘hearts’ when making the ‘distiller’s cuts’ for TRUTH. This ensures the highest level of purity while maintaining the delicate oat flavour. The spirit is chill-filtered with activated charcoal to give a smooth, full rounded character. Infused with BC coastal mountain water, the finished spirit is smooth, clean and lightly sweet – the perfect base for a classic Martini, neat, or a lively cocktail.
Distiller’s Tasting Notes at the still (95% alc./vol.):
The “Hearts” cut begins with a creamy oat character that subtly evolves to showcase delicate nutty notes with a hint of vanilla, and gradually gains complexity with a clean long-lasting finish.
In The Bottle (45% alc./vol.):
Clear. Full-bodied vodka with delicate aromas of vanilla, nut, and citrus with a long silky finish. Smooth. Balanced. Distinctive.
Endeavour Gin

Endeavour Gin is a versatile London Dry Style Gin. It begins with our 100% organic BC triple distilled wheat spirit. Using a botanical gin basket, an elaborate blend of (12) traditional botanicals (selected for their essential oil content) are then slowly infused during re-distillation in our single copper pot still. The result is a Gin with a clean, fresh, long lasting, and smooth finish; perfect for preparing classic G&T’s and sipping Martinis.
Distiller’s Tasting Notes at the still (83% alc./vol.):
The ‘Hearts’ cut begins with dominant notes of juniper that is quickly balanced with notes of grapefruit and lemon. The finish is lengthened by lingering liquorice and peppery notes.
In The Bottle (45% alc./vol.):
Endeavour on the nose is very complex. It is a compelling gin with bright floral notes underpinned with savoury botanicals on a solid juniper base. On the palate, juniper is first detected, which is quickly followed by a subtle interplay of citrus and aromatic botanicals; that is lightly brushed with hints of peppery Paradise Seed. Alchemy leads to a seamless, long, smooth, and lingering finish. Extremely supple and easy to drink on its own; when blended it creates an intriguing cocktail that will delight.
Endeavour Origins

Endeavour Origins Gin is Liberty’s version of a West Coast traditional Dry Style Gin. It begins with our 100% organic BC triple distilled wheat spirit. Using a botanical gin basket, an elaborate blend of (25) BC botanicals are then slowly infused during distillation in our single copper pot still. The result is a Gin with a rich, long lasting, and smooth finish; perfect for sipping or creating your own traditional gin cocktail.
Distiller’s Tasting Notes at the still (72.4% alc./vol.):
The “Heart” cut begins with dominant notes of juniper and Cypress pine. It evolves to a wild berry fruity character to finish with a bouquet of wild rose.
In The Bottle (45% alc./vol.):
A glimmer of BC in every glass, Endeavour Origins is an interesting journey and exploration through the subtle, delicate but distinctive flavours the West Coast of BC has to offer.
On the nose, Endeavour Origins presents multiple layers of aromas. A compelling gin it is distinctive with bright forest notes underpinned with ten wild berry botanicals on a solid BC juniper base.
On the palate juniper is first detected, quickly followed by a delicate interplay of spice and aromatic botanicals providing intrigue and complexity. It finishes with a hint of mint leading to a smooth, seamless and lingering finish.
Extremely supple and easy to drink on its own, when blended it creates a fascinating and delicious cocktail
Endeavour Pink – third release

Inspired by a classic gin cocktail made fashionable in the mid-19th century, Endeavour Pink Gin begins with our triple-distilled, 100% organic BC wheat spirit. Using a botanical gin basket, an elaborate blend of (18) botanicals were slowly infused during re-distillation in our single copper pot still. These botanicals were carefully selected for their aromatics, consistency and colour.
Distiller’s Tasting Notes at the still (72.8% alc./vol.):
The “Heart” cut begins with dominant floral notes with undertones of wild rosehips, then slowly evolves to finish with a delicate bouquet of wild rose.
In The Bottle (47% alc./vol.):
A compelling complex gin with rose and citrus notes. A variety of wild rosehips combined with a juniper base to produce a stunning all-natural Pink Gin.
On the nose, Endeavour Pink presents delicate notes of floral rose and framboise. Traditional gin botanicals of juniper, coriander and citrus peel follow and finishes with an intriguing hint of star anise.
On the palate, this is a forthright gin. It pushes the botanicals forward leading to a smooth, lingering finish. Extremely supple and easy to drink on its own and when blended creates a bright, refreshing cocktail. Its beautiful bright pink colour will charm all, and at full naval strength (47% alc./vol.) will excite gin enthusiasts everywhere.
Endeavour Old Tom – second release

Endeavour Old Tom Gin begins with our 100% organic BC triple distilled wheat spirit. Using a botanical gin basket, an elaborate blend of (10) botanicals are slowly infused during re-distillation in our single copper pot still. The Gin is then further macerated with a blend of (5) additional local and traditional botanicals before resting in 220-litre French Oak barrels for several months, to slowly gain character, complexity and colour.
Distiller’s Tasting Notes from the Barrel (50% alc./vol.):
On the nose there is a subtle nuance of juniper with rich wood tones. On the palate the flavours of berries and spices are fully integrated to create a well-rounded spirit.
In The Bottle (45% alc./vol.):
Endeavour Old Tom is a taste of history based on records dating back to the 1850’s. It is a full-flavoured, full-bodied, mahogany-coloured gin with a rich, intense nose. On the palate there is a pronounced spicy Christmas cake character with notes of juniper, mint, orange blossom, and mulberry, all intertwined with the oak to produce a mouth filling assortment of enticing flavours. The finish is long, powerful, spicy and compelling.
Liberty’s Old Tom will delight adventurous Gin enthusiasts; Old Tom is the Gin for Whiskey lovers.
Railspur No. 1 White

Railspur No. 1 White is our single pot triple distilled unaged barley based grain spirit (aka white whiskey). Made from 100% BC organic barley, most white whiskeys (white lightning, moonshine, white dog) use a base of corn or sugar often resulting in what can be perceived as a “rough” tasting spirit. The Liberty Distillery however takes pride in creating an artisan spirit that has an amazing ‘mix-ability’ factor, with a clean and pure finish that is powerfully complex.
Distiller’s Tasting Notes at the still (81% alc./vol.):
The ‘Hearts’ cut begins with rich notes of butterscotch, cacao bean and caramel. The finish has a complex character of white chocolate.
In The Bottle (47% alc./vol.):
Clear. It has a complex bouquet of rich barley, bees wax and honeycomb. On the palate it is instantly mouth filling with a full bodied honey and graham cracker character. At 47% it has a powerful long finish with warm caramel nuances. It is the perfect base for full flavored cocktails and delicious when sipped on its own.
Railspur No. 2 White – Wildflower Honey

Railspur No. 2 White is our single pot triple-distilled unaged grain spirit (aka white whiskey) made from 100% BC organic barley with an infusion of Chilliwack River Valley Wildflower Honey. Most white whiskies (white lightning, moonshine, white dog) use a base of corn or sugar resulting in a ‘rough’ tasting spirit. The Liberty Distillery however takes pride in creating an artisan spirit that has an amazing mixability factor with a rich and pure honey finish that is powerfully complex.

Railspur No. 3 Spike ‘Whiskey’

Railspur No. 3 Spike begins with 100% organic BC barley and triple-distilled in our single copper pot still; it is then barrel aged for just under one year in used 220-litre Bourbon barrels to slowly gain character, complexity and colour. Inspired by the unique spirits indigenous to other countries, Railspur No. 3 Spike is a twist on traditional whiskey. Not having met the mandatory three year mark, this young (almost) whiskey is drawn from barrel early to create a mouth-filling assortment of enticing flavours.
Distiller’s Tasting Notes at the still (63% alc./vol.):
On the nose, richness from the Bourbon barrel is revealed flirting with the young barley based spirit. On the palate, subtle flavours of vanilla, caramel, and cacao bean present themselves, culminating in a lingering graham cracker finish.
In The Bottle (45% alc./vol.):
Railspur No. 3 Spike has a complex aroma of barley, wood and spice. It is a full-flavoured, full-bodied, amber-coloured whiskey with a rich, intense nose. It will astonish your palate with flavours of vanilla, sarsaparilla, dried fruit and nuance. At 45% alc./vol. one sip reveals an intricate bouquet with a smooth muscular body and a powerful long finish that will delight all spirit aficionados, masters of mixology, and those who dare.
Trust Whiskey

From tradition comes the inspiration for TRUST… The Liberty Distillery’s single pot triple distilled Aged Whiskey. Our lips are sealed regarding what’s in store but we will share our Trust Whiskey will be made from 100% BC Organic Barley and will be reminiscent of a good Irish style Whiskey that is aged in 220L barrels to impart full complex flavors… a process that will not be rushed!
